Also, we begin to design and build our chocolate sculpture. You choose the theme; jungle, castle or underwater scene and create it out of rivers of flowing chocolate. |

| | | The first use of our ganche will be as a filling for classic truffles. Just like you pay top $$$ for at the big mall chocolate shops. We will learn the versatility of eggs in creating chocolate soufflés which are over 190 years old. |

| | | Learn tips to make lollipops that can make an interesting addition to any chocolate gift basket. Also, we will use breakfast cereal in a completely different way that will change the way you see your cereal in the morning. |

| | | Another old recipe dating back as early as 1894 chocolate mousse is the delicate balance of texture and creaminess. We will also build Napoleons with chocolate as our foundation for our sweet filling. |
